Harissa is a North African hot red sauce or paste made from chili peppers and garlic, often with coriander and caraway or cumin and served with olive oil. It may also contain tomatoes.

It played a predominant role in global affairs from the 16th century onwards, especially after the beginning of colonialism. Between the 17th and 20th centuries, European nations controlled at various times the Americas, most of Africa, Australasia and large portions of Asia.
